Get your money back and take that bride to the Hawaiian Islands!! I've been married to my college sweetheart for 47 years and went on our first cruise last year. Completely disappointed! We have traveled all over Europe and the USA/Canada/Mexico. Best place on earth for people our age is Kauai. We spend 3 nights in Honolulu on Waikiki Beach then a full week on the beautiful island of Kauai and then return to Honolulu for 2/3 more nights and then fly home. She'll love it and you'll love it.
If its like the only cruise I was ever on, there isn't enough time at any port of call to worry about much....unless you get really, really lost (virtually impossible if you have half a brain)

When you get off the ship go down the dock and when you see people recruiting you for excursions ask around for Tiger and Jimmy. They are snorkeling guides and they will get you drunk and take you on an awesome snorkeling trip. You can tell them because Jimmy has really long hair and Tiger wears a thong as a joke. It was an absolutely great time and the highlight of my cruise when I went.
Last time my wife and I went to Cozumel (2011), we had a fantastic time. We were on a cruise, but it was our last Port of Call. We got off the ship and not far was an Avis rent-a-car. We rented a smartcar and drove around the island. It cost $99 bucks and well worth it. We were able to do everything the tours do, but when we wanted to. We headed out and began along the west coast of the island, resort after resort and you can go to many of them during the day for the beach, pools, drinks, etc. It only cost like $5 to get in maybe $10? Anyway, the beaches are great.
After that, headed south and around the southern tip of the island. You have to experience driving along the cliffs/rocks right next to the ocean with the windows and sunroof open. Really cool view. Never had seen anything like it before. And there is a few bars along the way which makes it nice. It's great to stop at several of them because the people are great.
Then, on to the Mayan ruins. Really cool stuff. Worth the few hours we spent there. Again, we didn't have to wait for groups or buses.
After the ruins, it was back to San Miguel. But before boarding the ship, we stopped in San Miguel to visit Pancho's Backyard. Great Mexican restaurant, very authentic and I'm not even a Mexican food fanatic and it was the best we'd ever had. Fantastic. Lost of shops, etc., and then back to the ship. Trust me, rent a car, you'll love it.
