Not the kitchen, but they have to split with all the bus boys, and usually the hostess. If they are good enough to get a gig with 20 tables a night that average $150, they are probably very good at what they do and have been doing it a long time, and they deserve that money - it's a very tough job.

Some of you who have waited tables, help me do the correct math. If you work at a nice place and work an 8 hour shift. I would assume you wait at least 20 tables who would average $150 each tabs. @20% that's $600 in tips/8 hours= $75/hr then add in minimum wages. I doubt they make anything close, so tell why my math is wrong. Do waiters split their tips with the kitchen? I am not trying to cute here, I've just never understood 20% so help me.

Minimum 20%. If this service and the person is just plain awful, then less, probably 15ish. Depending on the size of the bill, if this person is good and you can tell they are working hard to make that effort with a great attitude, the 25% range. Most of those people are good people working to make ends meet, whether young kids working for school or others as a second income for a family. I would rather tip those people better than waste disposable income on other things people typically waste their money on.

I grew up in restaurants and I believe it is a sliding scale. I tip more than 15% if the bill is low or the service is excellent. I tip 15% if the service is acceptable. I am also not afraid to not tip at all if service is poor. I also tip on the total bill including tax . I have also given a more than 20% tip to waitress that was excellent even when the kitchen screwed up and I had gotten the meal for free or significantly discounted.
